Two Westervilles are opening restaurants right now, and they are not opening them the same way. Drive Polaris Parkway and you will find the same buildings you passed last summer with different names taped to the glass. Walk East Main Street in Uptown and you will find owner-operators moving into spaces that had one tenant for a decade. Same city, two very different economies of new.

The Polaris Parkway Tenant Swap
The stretch of Polaris between Worthington Road and Sancus is functioning as central Ohio's audition stage for regional and national concepts. The pattern is easy to see once you list the addresses side by side.

The Winking Lizard space at 496 Polaris Parkway is being taken over by Bombay House Restaurant & Bar, an upscale Indian concept. The June target slipped. In July the operators posted an update saying they were taking extra time to get the details right rather than rush the opening, with a new date promised soon. The menu is built around biryani, tandoori dishes, curries, Indian street food, fresh breads and desserts, plus a full-service bar with handcrafted cocktails.
A few hundred feet away, the Ohio-based, wellness-focused chain Rebol is moving into the former Hot Chicken Takeover at 435 Polaris Parkway. This will be Rebol's third location. Hot Chicken Takeover, for anyone who missed it, closed the Westerville store in September 2025 and shuttered its remaining locations by October after declining sales and lease disputes.
The Polaris churn keeps going. Roots Natural Kitchen has filed permits to move into the Polaris Parkway building Giordano's abruptly left, which would make it the brand's fourth Central Ohio location. Brassica, the Short North Mediterranean favorite, is heading to Polaris for its first ground-up build. And Qargo Coffee has arrived at 422 Polaris Parkway with a drive-thru and an Italian coffee-and-pastry format.
What the table above shows is a corridor where turnover is the business model. A regional or national operator signs a lease in a proven trade area, gets tested against a wealthy suburban customer base, and either scales or exits. For a resident, this means the "have you tried the new place at Polaris" conversation has a shorter half-life than it used to. Try it in the first six months.
Uptown Is Doing The Opposite
Walk the first block of East Main and South State and the tenant math looks nothing like Polaris. The new arrivals are mostly independent operators, and several of them are second locations of concepts their owners built somewhere else in Columbus.
Fox in the Snow, which already runs bakeries in Dublin, German Village, Italian Village and New Albany, has opened in Uptown Westerville in the old FUSIAN space at 79 S. State St. The pastry program is the reason to go early on a Saturday. It is also the reason parking on State by 9 a.m. is now harder than it was a year ago.
Begin, a cozy cafe on East Main Street, serves specialty coffees, breads, pastries and drinks with the stated intent of being a place to start a day, a conversation, or a dream. Ampersand Asian Supper Club, the sister restaurant to Asterisk Supper Club, is now open in Uptown with chef-driven ramen, rice bowls, small plates, Asian-inspired cocktails, sake and bubble tea, in a sleek modern room with a patio. Overgrown Cbus, a tropical houseplant boutique, has opened its second location in Uptown, focused on helping customers bring live greenery into their homes. The Giving Room, a multi-purpose event venue from Westerville Florist, has opened in Uptown as a space for creativity, connection and celebration. And Espresso Air is preparing to open Westhouse, a matcha and chocolate concept, in Uptown.
Note what these openings have in common. They are small footprints, owner-operator or small-group, and they are filling storefronts inside a historic commercial district rather than pads in a shopping center. Uptown was added to the National Park Service listing as a Historic Commercial District through the work of Uptown Westerville Inc., which shapes what can go into these buildings and, more importantly, who bothers to sign the lease. The tenants who commit to older buildings with quirky footprints are usually planning to be there a while.
The Weekend Of August 8
If you are picking one weekend to see the new Westerville at full volume, it is this one.
- Uptown Untapped — Saturday, Aug. 8, 6 to 10 p.m. on the first block of East Main Street. About 20 Ohio craft breweries pour, Uptown eateries handle the food, and live music runs through the night. The event is 21 and over and everyone must show ID. Enter from State Street next to the Old Bag of Nails. It runs rain or shine. Parking closes early. Haywood Alley and the lots north and south of East Main close beginning at 2 p.m. for setup, and the City of Westerville's free Smart Parking App will show open spots in Uptown lots.
- Sips & Sounds at Good Vibes Winery — 2 S. State St., a Saturday night music series featuring a rotating lineup of local musicians playing acoustic, folk, pop and jazz over a glass of wine. A quieter counter-program if the craft-brew crowd on Main is not your night.
- Trivia at Local Cantina Westerville — Monday at 7 p.m., Tacos, Tequila & Trivia with team play and prizes. Good post-weekend wind-down.
- First Amendment exhibit, Westerville History Museum — 126 S. State St. The exhibit opened May 1, 2026, and frames the First Amendment against the 250th anniversary of the United States. Free, indoor, and a solid rainy-afternoon plan.
The one thing Untapped does that no other event on the summer calendar does is put the density of the district on full display in a single block. If you have been thinking about walking Uptown more and driving Polaris less, this is the night the argument makes itself.
A Shortlist For The Next Time Your In-Laws Visit
Because this is the question locals actually get asked, here is a working answer built entirely from what has changed in the last year.
Morning: Fox in the Snow at 79 S. State for pastries. Walk two blocks to the Westerville History Museum for the First Amendment exhibit. Afternoon: Overgrown Cbus for a houseplant, then coffee at Begin on East Main. Dinner: Ampersand Asian Supper Club for ramen and small plates, or Bombay House on Polaris if it has opened by the time you read this. Later: Sips & Sounds at Good Vibes Winery, or a nightcap in the Uptown DORA, the Designated Outdoor Refreshment Area programmed by Uptown Westerville Inc.
None of that itinerary existed in its current form two years ago. That is the point. The neighborhood you moved into is not the neighborhood you are hosting in this weekend, and the pace of change is uneven across the city. Polaris will keep swapping tenants. Uptown will keep filling in slowly with operators who are betting on the building as much as the block.
Two Westervilles, One ZIP Code
There is a real estate reading of all this, but the useful one for a resident is simpler. Where you take a first-time visitor says something about which Westerville you are choosing to live in. The Polaris corridor is convenient, high-turnover, and increasingly national. Uptown is slower, more owner-operated, and more historically constrained. Both are working. They are just working differently.
If you have been putting off exploring the new Uptown because you thought it was still the Uptown of five years ago, this is the summer to reset that assumption. And if you have been telling yourself Polaris is nothing but drive-thrus, Bombay House and Brassica are about to make you wrong.
